Today dish is Stewed Trotter in Vietnamese style.



Ingredients:


  • 900 Grms Pig Trotter

  • 2 Stalks lemon grass

  • 3 Laos root style

  • 2 Dried Chillies

  • 8 Cloves Garlic

  • 6 Cloves Shallot

  • 1 Tbsp Wine

  • 1/2 Cup coconut milk


Seasoning:

  • 1/2 Cup Fish Gravy

  • 1 Tbsp granulated sugar

  • 4 cups water

Methods:

  1. Before chopping remove hair from trotter
  2. Parboil in boiling water for 5 min.
  3. Heat 2 Tbsp of oil.
  4. Saute dried chillies,garlic,shallots,lemongrass and trotter.
  5. Sizzle wine and add seasoning with Lao's root.
  6. Bring to boil.
  7. Transfer to an earthen pot and stew until tender.
  8. Stir in coconut juice.
  9. Serve in pot
